Mango Chutney

Ingredients

  • 2 1/4 cups cider vinegar
  • 3 1/2 cups sugar
  • 2 tablespoons ginger root, chopped
  • 2 red chiles
  • 1 clove garlic, minced
  • 1 1/4 teaspoons salt
  • 4 cups mango, peeled, coarsely chopped, half firm
  • 3 cups raisins

Method

  • Boil sugar and vinegar together for 5 minutes. Add ginger root, chiles, garlic and salt. Cook 10 minutes longer. Add mangos and raisins.
  • Cook over low heat until thickened. Pour into hot, sterilized jars.
