- 2 1/4 cups cider vinegar
- 3 1/2 cups sugar
- 2 tablespoons ginger root, chopped
- 2 red chiles
- 1 clove garlic, minced
- 1 1/4 teaspoons salt
- 4 cups mango, peeled, coarsely chopped, half firm
- 3 cups raisins
- Boil sugar and vinegar together for 5 minutes. Add ginger root, chiles, garlic and salt. Cook 10 minutes longer. Add mangos and raisins.
- Cook over low heat until thickened. Pour into hot, sterilized jars.
