Cucumber & Feta Cheese Salad


  • 4 cucumbers, peeled, sliced thin
  • 1 large red onion, halved and sliced
  • 1 red bell pepper, julienned
  • 1 large bunch flat leaf Italian parsley, leaves removed and chopped
  • 2 packages feta cheese, crumbled
  • 1 clove garlic, minced
  • 1 whole shallot, minced
  • 1/3 cup red wine vinegar
  • 2/3 cup extra virgin olive oil
  • salt/pepper to taste
  • If you wish you can add a small amount of
  • fresh chopped oregano or dill.


  • Place all of the cut vegetables in a bowl and mix together.
  • Make viniagrette by placing garlic, shallot, vinegar, o/o in bowl and mix. Taste for correct acid to your taste and add either vinegar or oil to suit your taste. Season with salt and pepper and additional herbs if you wish. Remember that the feta cheese will be salty. Place appropriate amount on vegetables; add cheese and taste again for correct seasoning. Enjoy!!
