Five Peppercorn Tenderloin of Beef

Ingredients

  • 1 3 1/4 # beef fillet, rolled and barded
  • 3 cloves garlic
  • 2 tablespoons coarsely crushed 5-peppercorn mix
  • 2 sprigs thyme, leaves removed and chopped

Method

  • 1. Preheat oven to 425 F
  • 2. Insert the garlic slivers into slits cut into fillet
  • 3. Pat pepper all over the beef so that it is well coated. Sprinkle with thyme and salt.
  • 4. Place the fillet in a shallow rasting pan and cook for 15 minutes. Reduce the heat to 350F and roast an additional 20 minutes for rare.
  • 5. Let the fillet rest at least 10 minutes before carving.
