Green Peas and Sugar Snaps in Sesame Dressing
Ingredients
- 6 cups frozen petite peas
- 1 1/2 lbs. sugar snap peas, trimmed
- 4 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar, packed
- 1 teaspoon freshly ground peper
- 1 teaspoon salt
Method
- Cook peas in boiling, salted water until almost tender, almond 1 minute. Add the sugar snaps and boil for 30 seconds more. Drain and shock cold and drain again.
- Whisk together the remaining ingredients. Just before serving, mix the peas and snap peas with the dressing. ( Both the dressing and the peas can be held at room temperature until ready to mix). Taste to correct seasoning.
