Green Peas and Sugar Snaps in Sesame Dressing


  • 6 cups frozen petite peas
  • 1 1/2 lbs. sugar snap peas, trimmed
  • 4 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar, packed
  • 1 teaspoon freshly ground peper
  • 1 teaspoon salt


  • Cook peas in boiling, salted water until almost tender, almond 1 minute. Add the sugar snaps and boil for 30 seconds more. Drain and shock cold and drain again.
  • Whisk together the remaining ingredients. Just before serving, mix the peas and snap peas with the dressing. ( Both the dressing and the peas can be held at room temperature until ready to mix). Taste to correct seasoning.
