Grilled Firm-Flesh Fish with Tropical Fruit Salsa


  • Relish:
  • 1 mango
  • 1 papayas, peeled, seeded, dice
  • 1 fresh pineapple, peeled, smal dice
  • 3 Roma tomatoes, peeled, seeded, dice
  • 1 small red or Spanish onion, small dice
  • 2 jalapenos, seeded, minced
  • lime juice, fresh squeezed
  • 3 tablespoons cilantro, chopped
  • 2 tablespoons mint, chopped
  • salmon fillets, or other firm-fleshed fish


  • Mix all fruit ingredients. Slightly oil (about 1 teaspoon per fillet) fish and grill on outside grill or inside on grill pan. When cooked through, remove from pan. Go back and add cilantro and mint with fruit and serve with salmon.
