Lentil Soup


  • 3 tablespoons olive oil
  • 2 medium onions
  • 2 carrots, cut small cubes
  • 4 tablespoons minced ginger
  • 8 cloves garlic
  • 2 teaspoons cumin
  • 1 teaspoon coriander, ground
  • 2 quarts water, approximately
  • 3 16 oz. cans tomatoes, drained, rinsed & chopped
  • 2 cups lentils, picked clean, rinsed
  • salt to taste
  • 1 lemon, juice of
  • 1 large bunch cilantro, chopped


  • Saute the onion, carrots, ginger, garlic, cumin, coriander until translucent. Add lentils, tomatoes and water and cook until lentils are soft....for about 45 minutes.
  • Take out about half of the lentils and puree in blender for food processor. Add back to soup mixture. Correct seasoning with salt and pepper. Add lemon juice. Serve garnished with cilantro.

this seemed like a good idea for a quite new years day dinner - Mom always made some kind of bean soup on New Years... isn't it good luck? So that's what we are having with big brown bread - Livvy put in all the ingredients and mixed it up - so she "made" dinner, plus, she'll eat anything she makes. :) Tastes great!
