Festive Pasta Salad

Ingredients

  • 1 pound pasta, your choice!!
  • 1 yellow bell pepper, juliened
  • 1 red bell pepper, juliened
  • 6 green onions, sliced thin
  • 1/2 red onion, sliced, marinated in red wine vinegar for 5-10 minutes
  • 1/2 cup kalamata olives
  • 1 pint cherry tomatoes, sliced in half
  • 1 small zucchini, juliened
  • 2 cups baby spinach leaves
  • 1/2 bunch Italian parsley, chopped
  • 1 large shallot
  • 1 clove garlic
  • 1/4 cup red wine vinegar
  • 1 tablespoon white balsamic vinegar
  • 1/2 cup olive oil
  • salt & pepper to taste

Notes

  • Mix all the vegetables. Whisk the vinegars, s/p, olive oil, shallot, garlic to taste adding more oil or vinegar as needed. Add the pasta to vegetables and pour vinaigrette over all and mix lightly.SOURCE: Apple Charlotte
