Festive Pasta Salad
Ingredients
- 1 pound pasta, your choice!!
- 1 yellow bell pepper, juliened
- 1 red bell pepper, juliened
- 6 green onions, sliced thin
- 1/2 red onion, sliced, marinated in red wine vinegar for 5-10 minutes
- 1/2 cup kalamata olives
- 1 pint cherry tomatoes, sliced in half
- 1 small zucchini, juliened
- 2 cups baby spinach leaves
- 1/2 bunch Italian parsley, chopped
- 1 large shallot
- 1 clove garlic
- 1/4 cup red wine vinegar
- 1 tablespoon white balsamic vinegar
- 1/2 cup olive oil
- salt & pepper to taste

Notes
- Mix all the vegetables. Whisk the vinegars, s/p, olive oil, shallot, garlic to taste adding more oil or vinegar as needed. Add the pasta to vegetables and pour vinaigrette over all and mix lightly.SOURCE: Apple Charlotte
