Mexican Tofu Cheese
Ingredients
- 2 packages soft tofu
- 1/2 lime, juiced
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon dried Mexican oregano, crushed
- 1 teaspoon freshly ground cumin, roast whole until fragrant in cast iron pan and grind in spice grinder.
- 1/2 teaspoon freshly ground coriander, roast whole until fragrant in cast iron pan and grind in spice grinder.
- salt to taste
Method
- Place crumbled cheese in strainer lined with a large coffee filter. Place over bowl to catch liquid. Place in refrigerator and strain for at least 4 hours.
- Place strained tofu into large bowl. Add the rest of the ingredients and taste for correct seasoning.
