Coconut Sesame Cookies
Ingredients
- 1 1/4 sticks unsalted butter
- 2/3 cup sugar
- 1 1/4 cups flour
- 1/3 cup sesame seeds + 1 tablespoon
- 3/4 cup shredded sweetened coconut
- 1/4 cup sliced almonds
Method
- Preheat oven to 350F.
- In a bowl of an electric mixer using the paddle attachment, cream the butter and sugar. Add the flour, 1/3 cup sesame seeds, coconut, and almonds. Mix just until incorporated.
- On a lightly floured board, roll the dough in a log about 18 inches long. Refrigerate the dough until firm. Slice the log 3/8 inch thick.
- Place the cookies 2 1/2 inches apart on a parchment paper lined baking sheet. Sprinkle the remaining tablespoon of sesame seeds on top of the cookies. Bake until golden brown around the edges, about 20 minutes.
