Sue Allen's Fruit Tart
Ingredients
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/8 teaspoon salt
- 1 egg yolk
- 1 tablespoon milk
- 1 teaspoon vanilla
- 1/2 teaspoon lemon zest
- 1 1/2 cups flour
- Filling:
- 8 ounces cream cheese
- 1/3 cup powdered sugar
- 1/2 teaspoon vanilla
- 1/2 teaspoon lemon juice
- 1/4 teaspoon lemon zest
- fruit assortment: strawberries,
- blueberries, kiwi, raspberries
- apricot or apple jelly glaze, heated and strained jam
Method
- Cream together butter sugar and salt. Add egg yolk, milk, vanilla and lemon zest. Mix in flour. Shape into large pizza-like circle on cookie sheet with parchment paper (or on pizza pan). Prick with a fork and bake at 375F for 10 minutes. Remove to rack to cool.
- Filling: Mix together rest of ingredients. Spread on cooled crust. Top decoratively with fruit and brush on glaze.
