Mexican Salsa

Ingredients

  • 25 lbs. roma tomato
  • 4 large onions, minced (or to taste)
  • 1 cup minced garlic
  • 10 cups cilantro, chopped
  • lime juice to taste (~ 1 cup?)
  • 15 jalapenos, minced
  • Test for spicyness....add red pepper
  • flakes if desired.
