Granola

Ingredients

  • 2 tablespoons canola oil
  • 5 cups oatmeal, old-fashioned rolled oats
  • 3 tablespoons wheat germ, toasted
  • 3/4 cup walnuts, toasted and chopped
  • 1 cup apple cider
  • 1/3 cup maple syrup, pure
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon kosher salt
  • 1 teaspoon vanilla
  • 1 cup raisins

Method

  • Preheat the oven to 300F. Lightly spray with oil to baking pans. Combine the oats wheat germ, walnuts and almonds.
  • Bring the cider to a boil in a small saucepan and reduce the liquid to about 1/2 cup. Stir in the canola oil, maple syrup, cinnamon, nutmeg, salt and vanilla. Pour the liquid over the oat mixture and stir.
  • Divide the mixture between the baking sheets and bak until light brown for about 40 minutes. Stir 3 or 4 times during the baking process. Transfer to racks to cool. When cool, place in a large bowl and add the raisins and cranberries. This can be stored in an airtight container at room temperature for about 2 weeks.
