Granola
Ingredients
- 2 tablespoons canola oil
- 5 cups oatmeal, old-fashioned rolled oats
- 3 tablespoons wheat germ, toasted
- 3/4 cup walnuts, toasted and chopped
- 1 cup apple cider
- 1/3 cup maple syrup, pure
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon kosher salt
- 1 teaspoon vanilla
- 1 cup raisins
Method
- Preheat the oven to 300F. Lightly spray with oil to baking pans. Combine the oats wheat germ, walnuts and almonds.
- Bring the cider to a boil in a small saucepan and reduce the liquid to about 1/2 cup. Stir in the canola oil, maple syrup, cinnamon, nutmeg, salt and vanilla. Pour the liquid over the oat mixture and stir.
- Divide the mixture between the baking sheets and bak until light brown for about 40 minutes. Stir 3 or 4 times during the baking process. Transfer to racks to cool. When cool, place in a large bowl and add the raisins and cranberries. This can be stored in an airtight container at room temperature for about 2 weeks.
