Cool Couscous with Fruit & Nuts
Ingredients
- 2 cups uncooked couscous
- 1 1/2 teaspoons kosher salt
- 3 cups boiling water
- 1/2 cup orange juice
- 2 tablespoons canola oil
- 1 cup dried mixed fruit, or fresh tropical fruit, if desired
- 1/4 cup dry roasted nuts, cashews or any nut, chopped
Method
- Combine couscous and salt in large bowl. Add boiling water. Cover and let stand 8 minutes or until liquid is absorbed. Combine juice and oil and add to couscous. Cover and chill for 30 minutes. Add fruit and cashews or nuts of choice.
