Vegan Pumpkin Pie

Ingredients

  • 3 cups mashed packed pumpkin
  • 1 1/2 pounds firm tofu
  • 1 cup maple syrup
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon salt
  • 2 unbaked pie crusts

Method

  • Combine all ingredients in a food processor. If it seems thick, add 1-3 tablespoons of water.

Notes
