Chucumber

Ingredients

  • 2 red onions, finely chopped
  • 4 small cucumbers, finely chopped
  • 1 cup tomatoes, finely chopped
  • 6 tablespoons cilantro, finely chopped
  • 2 red chiles, finely chopped
  • 2 green chiles, finely chopped
  • 3 tablespoons lemon juice
  • 2 teaspoons oil
  • 1 1/2 cups raw peanuts, roughly chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 teaspoons chaat masala

Method

  • Stir together onion, cus, tomatoes, cilantro, chiles and lemon juice.
  • Sitr fry the peanuts in a wok over high heat with oil and salt. Fry for 1 minute. Sprinkle with the pepper and chaat masala and stir. Fry for 2 minutes and remove and add to onion mixture. Season with salt to taste just before serving (to keep the vegetables from releasing too much juice).
