Mexican Tofu Cheese

Ingredients

  • 2 packages soft tofu
  • 1/2 lime, juiced
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon dried Mexican oregano, crushed
  • 1 teaspoon freshly ground cumin, roast whole until fragrant in cast iron pan and grind in spice grinder.
  • 1/2 teaspoon freshly ground coriander, roast whole until fragrant in cast iron pan and grind in spice grinder.
  • salt to taste

Method

  • Place crumbled cheese in strainer lined with a large coffee filter. Place over bowl to catch liquid. Place in refrigerator and strain for at least 4 hours.
  • Place strained tofu into large bowl. Add the rest of the ingredients and taste for correct seasoning.
